Crayfish also called crawfish, freshwater lobster, mudbug etc in some locations are freshwater crustaceans which belongs to the clade Astacidea. They are mostly found in running streams while many are seen in swamps, ditches and paddy fields. They feed on plants and have a feather like gills for breathing. Their bodies are grouped into two which are the Cephalothorax and the abdomen. The body of the crayfish are segmented into two parts and each parts contains one pair of appendages. They may be 17.5cm in length.

The importance of including crayfish in our diet cannot be overemphasized. They have all the necessary nutrients which are essential for our day to day activities. They are used as condiments in food also grounded and used to fortify baby foods.

Crayfish contains low fats and high quality protein and helpful in the maintaining of body weight and in building and developing the body tissues and muscles.
